Lamb Crown Roast Recipe With Herbs

Ingredients:
- 2 crown roasts of lamb (each having 14 chops which are 2 portions of 7- rib racks of lamb tied together) ¼ cup chopped fresh rosemary
- 12 cloves garlic, minced
- 2 tablespoons chopped fresh oregano
- 1 tablespoon salt
- 2 teaspoons ground pepper Olive oil
Directions:
1. Preheat oven to 450 F.
2. Place lamb on a large baking sheet spaced apart and brush olive oil all over. Rub generously with the mixture of garlic, oregano, rosemary, salt, and black pepper.
3. Cover them loosely with foil and roast for about 30 minutes until the thickest part reaches 130 degrees for medium rare.
4. Place lamb on a platter and allow it to stand for 10 minutes before removing the foil and string.
5. Cut your roasted lamb between ribs into chops.
