How To Make Sacristan (Puff Pastry Bread Sticks)

Sacristain Recipe

Ingredients -

  • Makes about 24 sticks
  • 1 sheet puff pastry 1 egg, lightly beaten in a small bowl
  • 2 tablespoons poppy seeds
  • 1 tablespoon paprika
  • ½ tablespoon garlic powder

Directions

1. Preheat your oven to 375–400°F. On a lightly floured work surface, roll the puff pastry into a rectangle approximately 12×14 inches and ⅛ inch thick. Some store-bought pastry will require slight additional rolling.

2. Brush the top of the puff pastry with the egg wash, and sprinkle with the poppy seeds. Carefully lift and flip the puff pastry over—poppy-seed side down (you may want to work on parchment paper). Brush the second side with egg wash then sprinkle with paprika and garlic powder—more or less to your taste.

3. Using a pizza cutter, cut thin strips of puff pastry, about ½ inch thick. Carefully lift the strip and twist it a few times. Place the strip on a parchment-paper-lined baking sheet. Press the ends firmly against the paper to secure.

4. Repeat with the other strips. Work quickly so your puff pastry doesn’t get too warm. If you feel it is getting too warm, transfer it to a baking sheet and place it in the freezer for 5 to 10 minutes to chill. 66

5. When you have all the strips twisted and secured, place them in the oven and bake for 10 to 15 minutes, or until puffed and golden brown. The sacristan should remove easily from the pan. You may need to use a spatula to lift the ends off the baking sheet. Remove from the pan and serve. It’s fun to present the sticks standing up in a basket, tall glasses, a vase, or tied in bundles.
