Rolled Pork Roast For Christmas Eve Dinner

Ingredients:
- 1 lbs boneless pork leg, butterflied
- ¼ cup each of minced shallot, jicama, and celery
- 3 slices of thick bacon, diced
- ½ cup red wine
- ¼ cup olive oil
- 1 sprig of thyme Salt and pepper
Directions:
1. Whisk all the ingredients
and allow the meat to marinate for 4-6
hours.
2. When your pork is ready, combine
the filling ingredients and spread them on
the middle of marinated pork. Roll
and secure with twine, then place
it in a skillet.
3. Roast for 1 hour and 30 minutes at
325 degrees, setting a small pan of
water in the oven at the same time.
4. Allow to rest for 20 minutes before
carving.
