 Rolled Pork Roast For Christmas Eve Dinner

Easy Recipe for Rolled Pork Roast with Sauce on the Menu For this Christmas Evening.

Ingredients: 

  • 1 lbs boneless pork leg, butterflied 
  • ¼ cup each of minced shallot, jicama, and celery 
  • 3 slices of thick bacon, diced 
  • ½ cup red wine 
  • ¼ cup olive oil 
  • 1 sprig of thyme Salt and pepper 

 Directions:

1. Whisk all the ingredients and allow the meat to marinate for 4-6 hours. 
2. When your pork is ready, combine the filling ingredients and spread them on the middle of marinated pork. Roll and secure with twine, then place it in a skillet. 
3. Roast for 1 hour and 30 minutes at 325 degrees, setting a small pan of water in the oven at the same time. 
4. Allow to rest for 20 minutes before carving.
